Ingredients

    Unsifted flour 5 3/4 cups
    Granulated sugar 3 TBSP
    Sea salt 1 tsp
    Active Dry Yeast 2 tsp
    Butter, soft 2 TBSP
    Very Hot Tap Water 2 cups
    Cheddar Cheese, shredded 1 1/2 cups
    Onion, minced 1/4 cups
    Garlic, minced 1 clove
    (rosemary, thyme and dill, dried and crushed 1 tsp each)

Directions

~ Mince garlic and onion, grate cheese. Run the hot water when done with the cheese. (for cheesy herb bread add 1/2 tsp each of dried rosemary, thyme and dill crush in a pastel and mortar) ~ In a large bowl thoroughly mix 2 cups of flour, sugar and undissolved yeast. Add butter. ~ Gradually add very hot tap water and beat 2 minutes on medium speed scraping the bowl occasionally. Add 1cup of flour to make a thick batter. Beat at high speed 2 more minutes. ~ Stir in cheese, onion and garlic (and dried herbs) and enough flour to make a soft dough. Turn out onto a lightly floured board; knead until smooth elastic, about 10 minutes. Place in a greased bowl, turning to grease the top. In an oven with only its light turned on cover and let rise until double in bulk, about an hour.
~ Punch down and turn onto the counter. Divide into 20 pieces. Form into balls and place 2 inches apart onto a greased baking sheet, press down lightly. Cover and let rise in the oven again until doubled in bulk about 45 minutes.
~ Preheat oven to 400 F. Bake about 15 minutes. Remove from baking sheets and cool on wire racks.
~Makes 20 medium or 24 small
