Introduction

I felt like some vegetables. But then, I felt like some chicken. So, I put them together in this wonderful dish. It is very good. The servings are only 1/2 cup servings, but put that 1/2 cup into a pita (not included in Nutritional information), and it's very filling! My husband likes shredded cheese in his (like photo), but I did not add any cheese to the nutritional information. I felt like some vegetables. But then, I felt like some chicken. Ingredients

    2.5 boneless skinless chicken breasts, baked and cubed
    1 Apple
    10 grapes, chopped
    .75 cup walnut, chopped
    1 cup sugar snap peas
    3 Tbsp Light Mayonnaise (you can substitute for lesser calories)

Directions

(I prepared my chicken breasts by baking them for 45 minutes at 375 degrees in 1.5 cups of water and 2 chicken bouillon cubes to give the chicken more flavor)

Mix all ingredients together in a large bowl. Chill for at least 30 minutes to an hour. Serve on salad, pitas, bread, whatever you desire.

Makes 12- 1/2 cup servings.
