Introduction

Ingredients

    4 large bananas, mashed
    1/2 cup white sugar
    1 slightly beaten egg
    1/2 cup applesauce
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 cup whole wheat flour
    1/2 cup white flour
    1/2 cup walnuts

Directions

Mix the mashed banana, sugar, egg and applesauce together. Set aside. In a separate bowl, mix together the baking soda, baking powder, salt, and flours. Mix wet and dry ingredients together along with the nuts. Pour into greased muffin tins, and bake at 350 degrees for approximately 20 mins.

Makes 12 muffins.

    Delicious! Very moist. We used unsweetened applesauce and added a little bit of vanilla. Next we"ll add cinnamon to our next batch. :) My oldest daughter and I made these and I have never made muffins or really ever baked before. - 1/2/14

    Great! I made half if this recipe. The muffins rose nicely they were moist and delicious. I substitued witj splenda and beat the egg and sugar together well. I also used twice as many nuts. The only bad thing is this recipe tastes a little bland and i wish i had used some spice such as cinnamon - 5/12/12
