Ingredients

    3 potatoes
    2-4 carrots
    1 small onion
    4 TBS oil

Directions

cut all vegetables, toss with the oil, add salt and pepper to taste, place in pyrex pan, roast in 400 degree oven for 45-60 mins.

you can vary the amts of potatoes/carrots/onion to your own taste. I estimated high on the oil for the calorie count, but probably much less is needed/used/consumed. This also works well if you substitute or add whole cloves of garlic for the onion. It can alternatively be wrapped well in foil, or in foil packets and cooked on the top rack of the grill instead of oven, though the cooking time may vary.
