Shelby wanted to do something different so we invented spicy tex-mex meatballs. They are baked to reduce fat and make a great cocktail appetizer with salsa. Ingredients



    * Ground beef, lean, 16 oz
    * Bread crumbs, dry, grated, plain, .5 cup
    * Salsa, .5 cup
    * Egg, fresh, 1 large
    * *Old El Paso Taco Seasoning packet
    * Jalapeno Peppers, .5 cup, sliced

Directions

Mix all ingredients (except the jalapenos) in a bowl and divide the meat into balls. poke a jalapeno slice into the center of each ball and place on a broiler pan. Bake in a 400 degree oven for 25 minutes or until the balls are cooked through. For extra crunch, roll in crushed corn chips before baking.
