Ingredients

    1 egg or 4 Tbsp egg substitute (egg beaters)
    1/4 c. applesauce, unsweetened
    1/4 cup sugar
    1/4 cup thawed orange juice concentrate
    3/4 cup rolled oats
    3/4 cup flour
    1/2 oz. chopped walnuts (7 halves or about 3 Tbsp pre-chopped)
    1/2 tsp baking soda
    1/4 tsp cinnamon
    1/4 cup dried cranberries
    1/2 tsp orange zest (grated peel)
    1/2 tsp vanilla or orange extract (optional)

Directions

Preheat oven to 375 F. Mix applesauce (or 1/2 ripe banana), egg, and juice concentrate in blender until smooth. Pour into mixing bowl, add sugar, stir. Add oats and flour, baking soda and cinnamon, then cranberries and zest, stirring regularly. Place by tablespoon onto well-greased cookie sheet. Bake 10-12 minutes.
