Introduction

A yummy, belly-warming chili. For a milder chili, remove seeds from jalapeno and habanero peppers.
Cooking instructions are for two hours, but the longer this cooks, the more flavor you will have. I generally cook for four or five hours.

Ingredients

    1 lb extra lean ground beef
    2 tbsp chili powder
    1 tsp ground cinnamon
    1 tsp ground oregano
    1 tsp paprika
    1 tsp red pepper flakes
    1 1/2 tbsp cumin
    1 tsp sugar
    1/2 tsp black pepper
    1/2 tsp salt
    1 whole bay leaf
    2 cups onions, chopped
    1 cup each red, orange and green peppers, chopped (about one medium pepper, each)
    1 small jalapeno pepper, minced (remove seeds for mild chili/keep seeds for spicy chili)
    3 small habanero peppers, minced (remove seeds for mild chili/keep seeds for spicy chili)
    3 garlic cloves, minced
    1 15.5 oz can pinto beans, rinsed and drained (about 2 cups)
    1 15.5 oz can white/northern, rinsed and drained (about 2 cups)
    3 oz tomato paste
    8 oz canned tomato sauce
    28 oz canned diced tomatoes (about 4 cups)

Directions

In a large stock pot, brown the meat and drain the fat.
Stir in onion, all peppers and garlic. Cook 5-7 minutes.
Add in spices (chili powder through salt). Stir together.
Add beans, tomato paste, tomato sauce and diced tomatoes. Stir together.
Add in bay leaf.
Bring pot to a boil. Cover and simmer at least two hours, or until thick.
Season with additional salt and pepper to taste.
