Introduction

I make this for my husband with soy strips, but those are not SCD-legal, alas. But the peas do the job! I make this for my husband with soy strips, but those are not SCD-legal, alas. But the peas do the job!

Ingredients

    1 tsp coconut oil
    1/2 medium onion
    2 cloves garlic
    2 stalks celery
    1 medium carrot
    Handful mushrooms
    2 stalks swiss chard
    1/2 cup red wine
    1 cup cooked black-eyed peas

Directions

Melt coconut oil in a large skillet (I use cast-iron). Chop all the veggies and saute until tender. Deglaze with wine. Add peas and cook until heated through. I eat this by myself ;-), so I guess it is one serving!
