Introduction

Very yummy, not exactly low in calories but one or two pieces can satisfy the sweet tooth and they make great gifts to others. Very yummy, not exactly low in calories but one or two pieces can satisfy the sweet tooth and they make great gifts to others.
Number of Servings: 36

Ingredients

    1/2 cup of sugar.
    1/2 cup evaporated milk (fat free)
    1 tablespoon white corn syrup (lite)
    6 ozs of chocolate chips (half of a 12 oz bag= approx 1 cup)
    1 cup chopped nuts, walnuts or pecans.
    1 cup of mini marshmallows.

Directions

Mix sugar, milk and 1 tbsp corn syrup in heavy 2 quart saucepan. bring to boil over medium heat stirring constantly. Continue boiling, stirring frequently, for 2 minutes. (it should be sorta frothy in appearance)
Remove from heat and add chocolate chips, stirring until completely melted.
Sit aside and let cool 10-15 minutes.
While cooling chop nuts up a bit finer if you wish.
After the candy cools enough add 1 cup of mini marshmallows and 1 cup of chopped nuts. Mix well.
Using 2 teaspoons, NOT tablespoons, drop candy onto a large baking sheet lined with wax paper.
If you do not have a baking sheet, line available surface with wax paper.
You measure the candy out and should end up with 30-36 candy pieces.( 2 1/2 to 3 dozen. )
Cooking/prep time approximate but it didnt take much time at all. From my calculations each piece should run between 68-100 calories depending on how large you make the candy. If you come out with 2 dozen, figure 100 each, 36 figure 68 calories each.
