Ingredients

    1 1/2 lbs. Ground beef, extra lean
    *4 tomato Red Ripe Tomatoes
    *1 Tbsp Corn Starch
    *1 tsp Oregano, ground
    *1 tsp Basil
    *3 clove Garlic
    8 Lasagna Noodles
    2 cup (not packed) Cottage Cheese, 2% Milkfat
    16 oz Mozzarella Cheese, part skim milk

    *can substitute one large jar of spaghetti sauce for these ingredients.





Directions

(I use Tupperware brand Stack Cooker and covered 9X13 Ultra 21 pan). Crumble ground beef in colander; place in large stack cooker, cover and microwave on high for 3 minutes. Stir, drain grease; cook additional 2 minutes. Repeat until thoroughly cooked. Make spaghetti sauce by combining tomatoes, corn starch, oregano, basil and pressed garlic cloves. Mix ground beef with spaghetti sauce. Spread 1/3 of sauce mixture on bottom of 9X13 pan in middle as there will be a little space at each end when lasagna noodles are placed in center. Place 4 lasagna noodles on top of meat/sauce layer. Spread 1/2 of the cottage or ricotta cheese over noodles followed by 2 cup shredded cheese. Spread 1/2 of the remaining meat/sauce mixture over cheese. Add 4 lasagna noodles; spread remaining cottage or ricotta cheese over noodles; sprinkle remaining shredded cheese and top off with remaining meat sauce. Cover and microwave on high for 15 minutes. Do NOT uncover. Turn dish 1/2 turn in microwave and cook another 15 minutes on high. Let set 10 minutes before removing lid when finished cooking. Sprinkle with Parmesan cheese before serving.
