Introduction

I adapted from Cooking Light this recipe by adding whole wheat flour, less sugar, and unsweetened applesauce. Result is really moist, definitely sweet enough, and good calorie bang for buck. Ingredients

    7.3 ounces white flour
    7.3 ounces whole grain pastry flour
    2 teaspoons salt
    2 teaspoons baking powder
    1 teaspoon ground cinnamon
    1 teaspoon pumpkin pie spice
    1/2 cup water
    40 g ground flaxseed (recipe calls for 1/3 cup ground flax seed--I use flax & company blend w/ flax seed, sunflower seeds, sesame seeds, almonds, pumpkin seeds available at union market)
    1 1/3 cup sugar
    1 cup unsweetened applesauce
    2/3 cup honey beer at room temperature
    2 egg whites
    2 large eggs
    15 oz can pumpkin

Directions

This makes two loaves; about 54 ounces. Nutrition info is per ounce cooked; A slice 1/12 of one loaf thick is approx 2.25 ounces.
Preheat oven to 350.
Mix dry ingredients flour, salt, baking soda, baking powder, cinnamon, pumpkin pie spice.
In smallish bowl mix water and flaxseed.
In large bowl put sugar, canola oil, beer, eggs and applesauce and blend with mixer/immersion blender until well mixed.
Add flaxseed mixture and pumpkin to large bowl; beat at low speed just until blended.
Add flour mixture with fork until just combined.
Pour into two loaf pans.
Bake at 350 for 1 hour 10 minutes or until toothpick comes out clean.
