Introduction

Number of Servings: 6

Ingredients

    1 Frozen pie shell (whole wheat is best)
    1 TBSP Olive Oil
    1/4 tsp salt
    1/4 tsp black pepper (ground)
    1 cup thinly sliced red onion
    1 garlic clove finely chopped
    16-20 ounces trimmed and coarsely chopped spinach
    3 Large eggs
    3/4 cup Almond Milk
    1/2 cup parmesan (grated)
    1/4 tsp nutmeg

Directions

Makes 6 servings (slices) oven temp 350

prep one frozen pie crust as directed on package (thaw, prick with fork, bake 20 minutes)

Heat olive oil, 1/8 tsp salt and 1/8 tsp pepper over medium-low heat in skillet. Add onion to warm skillet. Cook, stirring occasionally, til soft. (4 minutes)
Add garlic til browned (30 seconds)
Add spinach til wilted (2 minutes)

Place mixture in colander and press firmly with back of spoon to squeeze out all liquid. Put spinach in prepped pie crust (spread to cover crust).

Whisk together eggs, almond milk, parmesan and remaining salt and pepper. Pour into pie shell over spinach.

Sprinkle evenly with nutmeg

Bake til quiche sets (doesn't jiggle when nudged) approx 40-45 minutes

Let stand for 15-20 minutes before serving or refrigerate and pack up a piece for lunch!
