This is a healthy kid-friendly lunch. The bean dip makes a great spread for this sandwich, or stands alone with veggies and chips. Ingredients

Bean Dip:
1 cup canned white beans, drained and rinsed
1/4 cup part-skim ricotta cheese, or low-fat cottage cheese (cottage cheese for this calculation)
2 tsp lemon juice
1 tsp olive oil
1/2 clove garlic, roughly chopped
1/4 tsp salt
1/8 tsp pepper
Sandwich:
4 slices whole wheat bread
8 tbsp bean dip
8 tbsp part-skim shredded mozzarella cheese
Directions
For the dip:
Place all bean dip ingredients in mini food processor and blend until smooth and creamy.
For the sandwich:
Lightly toast bread.
Spread 2 tbsp dip on each slice
Top with cheese.
Place in toaster oven, or under broiler, and toast until cheese is melted and bubbly.
Store remaining dip for up to 1 week in fridge.
Makes 4 sandwiches, and you should have 2 servings of dip leftover.
