This is an easy and yummy breakfast for those mornings when you have to have something fast. We love it. This is an easy and yummy breakfast for those mornings when you have to have something fast. We love it.

Ingredients

    1 egg, fried
    1 corn tortilla
    1 slice of cheese
    1 salsa
    cilantro to taste

Directions

On a skillet sprayed with olive oil, heat one side of the tortilla while you are cooking your egg. Turn tortilla over and place a small slice of cheese in the center of the tortilla. Cook egg to hard stage (so it isn't runny and messy). Place cooked egg on top of the tortilla and cheese. Remove from pan and add salsa and cilantro to taste. Fold tortilla and enjoy like a taco.
