Introduction

Number of Servings: 8

Ingredients

    3 Litres of water
    1 chicken breast,
    200g onion
    100g carrot
    100g celery
    1 leek
    1 tbsp canola oil
    1 tsp whole black pepper
    2 hot chili peppers (optional)
    100ml white wine (optional)
    1/4 cup dried mushrooms (optional, but adds quite a punch to the flavour)

Directions

Dice the vegetables and the chicken into equal sized blocks.
In your stock pot or soup pot gently heat the oil and starting with the carrots, saute the veggies until nicely colored. If you are using wine, deglaze the pot with it at this point. You can cook it down a little bit now if you don't a strong wine taste. Add the water, chicken pieces and the dried mushrooms and chili peppers if you are using them, and bring it to the boil and reduce the temperature to a steady simmer.
It really does depend on how strong you like your broth, so just keep tasting and reducing.
