Introduction
I lightened a favorite banana bread by using whipped egg whites. The original called for a cup of sugar, and I don't like the taste of sucralose, so I substituted half the sugar with sucralose (Splenda). Ingredients

3 bananas, mashed (about 1 1/2 cup)
2/3 cup sugar
1/3 cup Splenda
2 eggs separated
1 cup all purpose flour
1 cup whole wheat flour (King Arthur White Whole wheat is best)
1 tsp baking powder
1/2 tsp salt
Directions
Preheat oven to 350 F.
In a large bowl mash the bananas with the sugar and sucralose well. Add the two egg yolks and mix. Set aside.
Sift together the flours, baking powder, and the salt. Gradually add the flour mixture to the bananas.
In another bowl, beat the egg whites until they form stiff white peaks.
Mix a small portion of the egg white into the banana batter to lighten it a bit. Gently fold the remaining egg whites into the batter, until no streaks of white can be seen.
Pour or scoop into a 9" x 5" loaf pan, greased or sprayed with non stick spray. Bake for 50 minutes, or until a cake tester comes out clean.
