Introduction

I found this recipe on the back of a Foster Farms chicken package. My entire family loved it, and it fit well in my Spark People plan. I served it with brown rice and stir fried veggies. Ingredients

    1 whole chicken
    1 Tbsp oil
    1/3 cup soy sauce
    1/3 cup brown sugar
    1/2 cup water
    1 clove garlic
    1 Tbsp ketchup
    1 green onion, sliced
    1/4 cup dry sherry or apple juice or a splash of red wine vinegar
    1/2 tsp crushed red pepper flakes
    2 Tbsp. corn starch
    2 Tbsp water

Directions

1. Rinse chicken and pat dry. Heat oil in dutch oven and brown chicken on all sides.
2. Mix together soy sauce, brown sugar, water, ketchup, sherry, red pepper, garlic, and green onion. Pour mixture over chicken. cover and simmer 30-40 minutes.
3. Turn chicken once during cooking. Remove chicken to platter. Skim fat from sauce.
4. Blend together cornstarch and water and whisk into sauce. Cook, stirring constantly, until thickened. Serve sauce with chicken. If desired may sprinkle cooked chicken with 2 tsp toasted sesame seeds.
