Introduction

I was looking for a chili recipe to make with the ingredients I had on hand. I took a recipe I found on allrecipes.com (http://allrecipes.com/Recipe/Debdoozies-B
lue-Ribbon-Chili/Detail.aspx) and modified it slightly and added veggies. I used traditional pasta sauce instead of tomato sauce , I added diced tomatos with green chilis, used mushrooms in place of ground beef, and added green and red peppers. Yummy!

Ingredients

    Olive oil spray (one spray)
    Beans, red kidney, 1 15 oz can.
    Traditional Pasta Sauce, 1 1/4 cup
    *Tomatoes, red, ripe, canned, with green chilies, 1 cup
    Chili powder, 2 tbsp
    Green Bell Pepper, 1 chopped
    Red Bell Pepper, 1 chopped
    Mushrooms, fresh, .75 cup, sliced
    Red Onion, 1/2 chopped

Directions

Over medium heat, Saute' onion , mushroom and peppers in a medium sauce pan lightly sprayed with olive oil (about 2 minutes, until tender). Add remaining ingredients and mix throughly. Cook until heated through. I cooked it until it started boiling and stirred it occasionally.
