Ingredients

    2 large yams
    2 eggs
    1 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp ginger
    1 tsp allspice
    3/4 cup sugar
    1 tbsp flour
    1 3/4 cup evaporated milk
    After yams are cooked and peeled, in a large bowl place all ingredients together and mix with electric mixer until smooth.
    Pour in crust.

    Crust Ingredients
    1 1/4 cup flour
    1/4 tsp salt
    1/3 cup shortening
    water

Directions

bake Yams in foil rubbed with olive oil for 1 - 1 1/2 hrs.

Bake pie with foil covered around crust for 1 20 min

remove foil and cook 25 more min
