Ingredients

    2 cups fresh mushrooms sliced
    1.5 - 2 cups celery sliced
    1 bunch fresh baby carrots with tops sliced (chop some of the green to add color and flavor)
    3 small leeks sliced and rinsed well
    1 can white beans (I use cannellini beans)
    3 tablespoons olive oil
    2-3 cups of turkey meat (I used dark meat)
    salt and pepper to taste
    optional fresh sage finely chopped

Directions

Saute mushrooms in olive oil, add leeks, celery and carrots. Saute until tender. Salt to taste (I also added fresh sage and carrot greens for flavor and color). Add turkey and chicken broth. Simmer for 30-60 minutes. Season to taste with additional salt and pepper. Freezes well.
