Ingredients

1 lb steel cut oats
1 c walnuts
2 T kefir
dash unrefined sea salt
6 eggs
2 c milk (use raw!)
1/4 c maple syrup
1/2 c raisins, or dried cranberries
1/2 c dried unsulfured apricots, diced
2 T cinnamon
1/4 c coconut oil
Directions
pour steel cut oats and nuts in ceramic bowl. Add filtered water and kefir to completely submerge oats and nuts. add salt. Soak overnight. Strain out liquid.
Preheat oven to 375*. Grease 9 x 13 with some extra coconut oil or butter.
beat together eggs, milk, syrup and pour over nuts and oats. gently fold in fruit, cinnamon and coconut oil. Pour into pan and spread out. Bake 40-45 minutes or until knife inserted in center comes out clean.
Let sit for 5-10 minutes. Serve with a dollop of yogurt.
