Ingredients

4 tilapia fillets
1 c dry quinoa
2 tsp Olive Oil
1 English Cucumber (with peel) Diced
2 oz Athenos Reduced Fat Feta Cheese
Lemon Juice to taste
Pam Spray
Salt pepper to taste
1 tsp Paprika (or to taste)
Directions
Prepare Quinoa in 2 c water or stock (stock will alter calories and sodium content). Quinoa is typically prepared by rinsing well under cold water. Bringing 2 cups of water to a boil. Add the quinoa, cover, and reduce heat to a simmer. Cook until water has evaporated and quinoa is soft. Usually about 15 minutes.
Spray a large non stick skillet with pam. Heat on medium high heat. Pat fish dry and season with salt and pepper and paprika.
Cook fillets until opaque throughout, about 4 minutes per side depending on thickness and heat level.
Stir cucumber, feta, 2 tsp olive oil, and lemon juice into quinoa.
