Ingredients

    1 pkg sliced cremini mushrooms
    1 1/2 Tbs olive oil
    2 c low sodium beef broth
    1/3 c minced shallots
    2 cloves garlic, minced
    1/4 tsp kosher salt
    1/4 tsp black pepper
    1/2 c pinot noir (or other red wine)
    1 Tbs all purpose flour
    2 Tbs chopped fresh sage
    1 Tbs chopped fresh thyme


Directions

Heat a large saucepan over medium-high heat. Add oil to pan, add shallots. Saute 1 minute, stirring frequently. Add mushrooms, saute 2 minutes or until almost tender. Add garlic, saute 30 seconds stirring constantly. Add salt and pepper. Add wine to pan, bring to a boil. Cook until liquid almost evaporates (about 3 minutes). Sprinkle 2 Tbs flour over mushroom mixture, cook stirring constantly 1 minute until flour is cooked through. Add beef broth 1/2 cup at a time, bringing to a boil and stirrig constantly. Cook 2 minutes or until slightly thick. Stir in sage and thyme. Serve with almost any kind of beef, from salsbury steak to filet mignon.
