Ingredients

    Extra firm tofu 1 package cut into small pieces
    Chickpeas 16 oz can, drained and rinsed
    Spinach, 1 cup or about 1/2 of a frozen package thawed
    Cumin, 1 tsp
    Garam Masala, 2tsp
    Salt and pepper to taste

Directions

Stir fry tofu in water or olive oil. Add seasonings to tofu. Add chickpeas and then the spinach. Serve over any grain you like. Brown rice, cous cous, or quinoa all work well.
