Introduction

Everyone in my house ate this without complaint... in my house this is a feat of near miracle proportions. Everyone in my house ate this without complaint... in my house this is a feat of near miracle proportions.

Ingredients

    6 small potatoes (14.5 oz)
    3 cups spinach
    1 teaspoon crushed garlic
    3 whole eggs
    3/4 cup egg whites
    1/3 cup 1% milk
    1/2 cup cheese (strongly flavoured)
    salt and pepper to taste (not included in nutritional information)

Directions

Salt and pepper the potatoes and mix any herbs you may want onto the potatoes... thinly slice and lay in a pie dish. Beat the eggs and egg whites until nice and fluffy and add garlic and salt and pepper to taste. Over the potatoes layer the spinach and any other random veg you may want to throw in... :) On top sprinkle the cheese. Put in an oven at 350 until firm about 30 mins.
