Ingredients

    2 C diced potatoes, skin on, cut 1/4-inch pieces
    4 cloves garlic, chopped
    1/2 large yellow onion, thinly sliced
    5 cups stock (salt free stock or bullion)
    1T Mrs. Dash Original Blend
    1 cup white beans, precooked or canned (drained & rinsed well)
    1/2 medium cabbage, cored and sliced into 1/4-inch ribbons (6 cups raw)

Directions

Serves 4 large bowls of soup. Each serving has about 1.5 veggies and 2 starches.

Place potatoes, garlic and onion in a stock pot, add 1/2c water and sautee until onion begins to soften. Add the stock, spices and the beans and bring the pot to a simmer. Simmer until the potatoes are half done - about 10 minutes. Stir in the cabbage and cook for about 10 more minutes, until the cabbage and potatoes are tender.

If you are not following the Rice Diet, add salt to taste or use salted stock/bullion - the flavor will improve dramatically.
