Ingredients

Lean Ground Beef
Minute Rice
Onion
Egg
Salt
Pepper
Tomatoe Juice
Directions
Combine 1/2 pound ground beef, 1/2 cup of minute rice, one egg, pinch of salt and pepper and combine with hands
Roll into 8 small/medium size meatballs
Place in skillet and brown on all sides (takes about 5-8 minutes)
Once the meat is browned, pour one can (12 oz) of tomatoe juice over meatballs
Reduce heat and simmer for an additional 15 minutes, turning occasionally, until meat is cooked through.
Serve with your favorite side! Recipe is easy to double for a larger family.
