    2 12 oz pkgs Sweet Italian Chicken Sausage
    12 oz carrots, peeled, chopped
    12 oz onion peeled and chopped
    4 cloves garlic
    3 qts fat-skimmed chicken broth
    2 can (15 oz) cannelloni (white) beans, rinsed and drained
    2 cans (14 1/2 oz) diced tomatos
    1 T. dried basil
    2 c. dried large shell-shaped pasta
    4 qts. (about 12 oz. spinach leaves, rinsed
    salt and pepper


Slice sausages into small pieces and place into and 8 to 10 quart pan over high hear: stir often, until browned about 2-3 minutes. Spoon out.

Puree 1 can of beans in a food processor. Add carrots, onion and garlic to the chicken sausage: stir often until onion is limp, 5 to 7 minutes. Add brother, tomatoes (including juice), pureed beans and 1 can whole beans and basil.* Bring to a boil. Add pasta, reduce heat, cover and simmer, stirring occasionally, until pasta is just tender to bite, about 10 minutes. Skim and discard any fat. Stir in spinach and cook just until wilted, about 30 seconds. Add salt and pepper to taste. Top with parmesan cheese, if desired.
* Recipe calls for diced tomatoes and the 1 T basil. I use tomatoes with garlic basil and oregano.
