Introduction

Makes 10 cups of sauce. 1/2 cup = 1 serving.
Puree canned tomatoes with onion garlic and spices.
Originally I did not include sugar in this recipe, but I find that the sugar makes the sauce taste less acidic. If you omit the sugar 1 serving=49 calories instead of 54.

Ingredients

    2 tbs olive oil
    1 medium onion chopped
    1-2 TBS garlic
    2 29 oz cans of Redpack canned tomato puree
    Herbs to taste (dried or fresh)
    2 TBS sugar

Directions

Sautee onion and garlic in olive oil until onion is soft. Don't let the garlic get too brown.
Add tomato puree and one can of water.
Bring to boil then reduce heat to low to simmer at least 1 hour
Add spices to taste.
Let it simmer for a while before adding the sugar, you might not need or want it. You can also add salt and red pepper to taste.
The longer it sits the better it tastes so jar some or freeze and use as the base of the next batch you make.
Serving size is 1/2 cup of sauce. This recipe yields 10 cups of sauce.
