Introduction

This is a comfort food. Like chicken pot pie but without the calories. The biscuits may be substituted for reduced fat refrigerated biscuits for even less calories. This is a comfort food. Ingredients

    2 cups cooked chicken cut into cubes
    1 10oz pkg of frozen mixed vegetables
    4 slices 2% American cheese
    1 tube refrigerated biscuits
    1 1/2 cups skim milk
    1 1/2 tsp cornstarch
    1/2 tsp black pepper
    1 tsp dry mustard

Directions

In a large skillet over medium heat stir fry chicken and vegetables until vegetables are thawed. Add cheese slices, cook until cheese is melted. Remove from heat. In a small bowel mix together cornstarch, black pepper and mustard. Add milk and stir well. Add to chicken mixture and mix together until well blended. Pour and spread into a 13 x 9 inch glass baking dish that has been sprayed with cooking spray. Add biscuits on top spacing evenly apart. Bake in a 350 degree oven until bubbly and biscuits are golden, about 25-35 minutes. Makes 6 servings.
