Introduction

A nice light fish recipe. You can substitute the cod fillets for any other white fleshed fish. A nice light fish recipe. You can substitute the cod fillets for any other white fleshed fish.

Ingredients

    60 ml (4 Tbsp) chopped onions
    480 g (16 oz) cod fillets
    60 ml (4 Tbsp) chopped fresh parsley
    20 ml (4 tsp) olive oil
    125 ml (½ cup) white wine
    To taste salt, pepper, paprika et lemon juice
    4 lemon wedges

Directions

Spread half of the onions in a baking dish and place fish on top.
Add the rest of the onions, parsley, olive oil, lemon juice, and wine.
Add the salt, pepper and paprika. Bake in oven for 12 to 15 minutes at 180 °C (350 °F). Finish cooking on broil.
Serve each portion with a wedge of lemon.
Makes 4 servings.
