Ingredients

    1 pound Ground Beef
    1 small Onion
    2 Jalapeno Peppers seeded chopped
    2 boxes (8.5 oz) Corn Bread mix
    eggs beaten
    1 cup milk
    1/2 cup veg oil
    2 cups cheddar cheese shredded
    3/4 tsp salt
    1/2 tsp baking soda
    can (14.75oz) creamed corn

Directions

Preheat oven to 350
Grease 13/9/2 pan

Brown ground beef with chopped onion and jalapenos
Drain fat set aside.

In a bowl mix:
Corn bread mix
salt
baking soda
corn
milk
oil
eggs

Pour half the mix in the pan
Layer all the meat mixture evenly on top
put cheese on top of meat
top with the rest of the mixture

Cook for 40/45 min
let rest about 5 min and serve hot
great with some hot sauce.
