Ingredients

    1 Tbsp Olive Oil
    2 Med Red Onions, chopped
    (Optional 2 Stalks Chopped Celery)
    2 Garlic Heads, Minced
    2 (4oz) canned chopped green chiles
    2 Tbsp Ground Cumin
    1 tsp Cayenne Pepper
    4 Dashes Tabasco Sauce
    2/3 tsp Dried Oregano
    5 Cups Chicken Stock
    4 Dups Diced, Cooked Chicken (I used canned Costco Chicken)
    4 (16 oz) cans Navy Beans (washed)
    1 Large can White or Red Kidney Beans
    1 tsp Lime Juice
    Salt and Pepper to taste
    Chopped Green Onions

Tips

This is a spicy recipe. If you don't like spicy, only use 1 can of green chiles, and 1 Tbsp of Cumin. To add spice, you can add a minced jalapeno or more green chiles :)
This will make a lot of chili, you can half the recipe, or freeze some.


Directions

Heat Oil in a large (and I mean large) dutch oven over medium high heat. Add the onions (celery if using) and garlic for about 5 minutes or until soft. Add the chilies, cumin, cayenne, and tobasco; cook for about 10 minutes. Add chicken stock, cooked chicken, beans, and lime juice. Cook over low for at least 1 hour, adding more stock if necessary. Season with pepper (and salt if you want). Add chopped green onions about 5 minutes before serving. Enjoy!
