Introduction

These are super yummy hash browns that are better for your waistline than those oil-soaked ones you get in restaurants. These are super yummy hash browns that are better for your waistline than those oil-soaked ones you get in restaurants.
Number of Servings: 6

Ingredients

    3 russet potatoes
    1/2 yellow onion
    1/2 bell pepper (green, yellow, or red)
    1/3 C all-purpose flour
    1 egg or egg substitute
    salt and pepper to taste
    non-stick cooking spray

Directions

1. Shred potatoes in a food processor, or using a hand shredder.
2. Rinse thoroughly, until the water run off is clear. Dry completely.
3. Finely chop onion and green pepper and put in a large mixing bowl.
4. Add flour, egg, salt, pepper, and potatoes to the bowl. Stir until all ingredients are mixed well.
5. Heat a heavy pan on medium heat, coat with non-stick cooking spray. When the pan is hot, add a layer of hash browns that is about 1/4 in thick, or create several patties.
6. Cook approximately 5 minutes, flip, and repeat.
**You can also add mushrooms, tomatoes, curry powder, cayenne powder, hot sauce, or other spices/veggies as you like!**

    i saute the onions and mushrooms in a cup chicken broth.added to 24 oz frozen potatos. flour i used whole wheat. i tried to rate this recipe better.. 3 0r 4 i sprayed the pan with cooking spray the potatos turned out pretty good and taste not crisp enough though...good low cal recipe - 3/13/11
