Introduction

A wonderful fish dish that is made perfect with a large serving of steamed vegetables. A wonderful fish dish that is made perfect with a large serving of steamed vegetables.
Number of Servings: 4

Ingredients

    1 lb (500g) cod fillets, cut into serving size pieces
    1 tbsp vegetable oil
    2 garlic cloves, chopped fine
    1/2 tsp (2ml) salt
    1/4 tsp (1ml) pepper
    1/2 tsp (2ml) thyme
    1/3 cup (75ml) white wine
    6 sundried tomatoes (packed in oil), cut into small pieces
    1 small lemon, sliced thin

Directions

Brush cod fillets with oil and sprinkle with garlic. Sprinkle with salt, pepper & thyme.
Place fillets in baking dish and add wine.
Top with sundried tomatoes and lemon slices.
Cover with foil and bake at 375 for 20 minutes or until fish flakes easily when tested with a fork.
Serve with vegetables!

    As others have said, I thought this was very bland. There aren't any ingredients that give it any pizazz. If I was to modify this, I would add more garlic and a sprinkle of paprika, cumin, red pepper flakes, chili powder, or some other similar spice/herb. - 4/9/12
