Ingredients

    1 bottle (64 oz) of low sodium V-8 juice
    1 pound of beef stew meat, cubed
    1 tbsp olive oil
    1 cup chopped onion
    1 package of frozen mixed vegetables (can use any variety, or add each vegetable individually)
    1 package of Lipton Onion Soup dry mix

Directions

Brown beef stew in olive oil. In soup pot, add V-8 juice, meat, onion, frozen vegetables, and soup mix. Bring to a boil, then reduce heat and simmer 30-45 minutes or until beef is cooked through. Makes approximately 6 bowls.
