Ingredients

    Cooked Chicken
    Cumin
    Garlic Powder
    Onion
    Green, Red, Yellow Bell Peppers
    Defrosted Frozen Corn
    Cilantro
    Shredded Cheaddar Cheese
    Lime
    Corn Tortillas
    cooking spray
    optional, chili pepper powder

Directions

Makes 6 taquitos (based on 6" tortillas)

Preheat oven to 425 degrees

Chop the onions, peppers and cooked chicken and mix together with corn in medium bowl. Add the spices and juice from one lime and toss.

Spread the mixture amongst the tortillas and top with cheese.

Roll each tortilla and place seam side down on baking sheet coated in cooking spray.

Spray the top of each with the cooking spray.

Bake for 5 minutes, flip, and back for an additional 5 minutes.

Remove from oven and enjoy with salsa!
