Ingredients

Rice, Kraft Minute Whole Grain Brown Rice, 2.5 cup
Onions, raw, .5 cup, finely chopped
Garlic, minced 6 cloves
Garlic Powder .5 tsp
Onion Powder .5 tsp
Cumin seed, ground .5 tbsp
Red Pepper flakes .25 tsp
Sea Salt, 1 tsp
Tomatoes, canned, diced, no salt added, 14 oz. can
Black Beans, fresh cooked, no salt added 3.5 cups
Directions
Cook the rice according to the package directions (without the salt and butter or oil). Place a 3 quart sauce pan over medium heat and spray with nonstick olive oil spray. Cook red onion and minced garlic for about three minutes. Add cumin, pepper flakes and another quick spray and cook for about 30 seconds more. Add the beans and tomatoes, along with the additional garlic and onion powders. Stir well and cook for about 20 minutes, on a lower heat setting; stirring occasionally. If necessary, add 1/4 cup of water for moisture. Add in the cooked rice and mix well. Add salsa, tortilla chips (if desired), grilled chicken, or grilled pork loin for a great main dish!
This also makes a great stuffed burrito! Add lettuce, sour cream, onions,etc. It's delicious!
