Introduction

Number of Servings: 6

Ingredients

    5 cups of 99% fat free chicken broth
    4 skinless, boneless chicken breasts
    2 stalks of celery chopped
    1 bay leaf
    2 cups Leeks washed REALLY well and sliced
    1/4 C Pearled Barley (optional)
    1 medium carrot sliced (optional)
    Salt and pepper to taste

Directions

Cook everything EXCEPT the Leeks in the broth for about 30 minutes. Add the leeks and cook for about 15 minutes more. Remove the chicken, allowing it to cool some, before cutting it into bite size pieces, and returning it to the soup. Remove the bay leaf, adjust seasoning, and serve
