Ingredients

1 egg at room temperature
1 tbsp lemon juice
2 tsp white vinegar
1/2 tsp salt
1/4 tsp powdered mustard
1 c vegetable oil
Place egg, lemon juice, vinegar, salt and mustard in blender, add 1/4 cup of oil. Cover blender and turn motor on low speed. While blender is running, remove insert from cover and pour in remaining oil in a slow steady stream. When about 1/2 the oi has been added, mayonnaise will thicken. You can actually hear this process taking place.
Makes 1 1/4 cups with 33 calories per teaspoon
