    * Spinach, frozen, 16oz bag
    * Nutmeg, ground, dash
    * Garlic powder, 1 tsp
    * Pepper, red or cayenne, dash
    * Pepper, black, 1 tsp
    * Sea Salt, 1/4 tsp
    * Egg, fresh, 5 large
    * Parmesan Cheese, grated, 5 tbsp
    * Olive Oil, 1 1tsp


Heat pan on medium and spritz with olive oil. Spread frozen spinach in pan, season with spices and cover to steam about 4 minutes.
When spinach is hot crack eggs on top and season with pepper. Cover and cook 3 minutes.
Remove cover, add 1 tbs of parmesan on top of each egg and recover.

Makes 5 servings
Serve with an english muffin and orange slices (not included in nutrition info)
