Introduction

I combined a couple recipes to design my own with what I had in my cupbords. Tastes pretty good...to me. I combined a couple recipes to design my own with what I had in my cupbords. Tastes pretty good...to me.
Number of Servings: 6

Ingredients

    1 large onion
    5 large carrots
    1 can chick peas
    1 can pumpkin puree
    1 apple
    1 tbsp curry pwdr
    1 tsp cayenne
    1 tsp garlic pwdr
    1 tbsp honey (optional)
    salt & pepper (optional)

Directions

Saute onion in oil until clear, add chopped carrots. Cook for 5-10 mins. Add chick peas, curry & cayenne cook another 5 mins. Add 1 cup stock (chicken would be better-all I had was beef) and chopped apple. Simmer 10 mins.
Puree in batches adding more broth as needed to blend easier.
Add back to pot, mix in pumpkin. Season with salt & pepper if desired. Add 1 tbsp honey (optional).
