Ingredients

    8 oz kale, blanched, wrung out and chopped
    4 oz soft goat or feta cheese
    10 sheets whole wheat lasagna
    1/2 cup parmesan cheese, shredded
    2 cups Diavolo sauce

Directions

Preheat oven to 400 degrees.

Mix feta and ricotta together in a bowl, salt and pepper to taste.

Boil lasagna noodles until desired doneness.

Layer three noodles in the bottom of a greased pan. Add 1/2 cup sace, 1/2 the cheese mixture, 1/2 the kale. Top with three more noodles, rest of the cheese and kale another scop of sauce. Top with three more noodles and the remaining sauce.

Sprinkle the top with the parmesan cheese.

Bake for 40 minutes, or until the cheese is melted and lasagna is bubbly.
