Ingredients

2 Tbsp EVOO
1 Tbsp butter
1 1/2 lb boneless skinless chicken breast, cubed
1/2 lb fresh mushrooms, sliced
2 cloves garlic, diced
1 md. onion, diced
1 red bell pepper, seeded and diced
2 tsp paprika
salt and pepper to taste
1 c chicken stock
1 c tomato sauce
1/2 c sour cream
1 package gnocchi
Directions
Start water to boil for gnocchi, before starting any prep work. Then, by the time the gnocchi is cooked the rest of the ingredients are ready to mix.
Heat the EVOO and butter in a large skillet. Add the chicken and cook 3-4 minutes. Push off to the sides of the skillet, and add mushrooms, onion, garlic and pepper to the center. Cook for about 5 minutes then mix in the chicken stock, paprika, tomato sauce and salt and pepper. Bring to a bubble, reduce heat and simmer for 5 minutes. Stir in sour cream and turn off heat.
While cooking the chicken mixture, the water will come to a boil. Add the gnocchi to the water; when they float they are done. Drain and add to the chicken.
