Introduction

I had planned on making a curry lentil soup for an office potluck. At the last minute, they changed the theme to Italian. It came out deliciously! I had planned on making a curry lentil soup for an office potluck. At the last minute, they changed the theme to Italian. It came out deliciously!
Number of Servings: 8

Ingredients

    2 cans of tomatoes, pureed or whole depending on your preference.
    1 cup red lentils, rinsed well
    1 box of Kitchen Basics Vegetable Stock
    1 cup water
    2 tbs olive oil
    1 large potato, peeled and cubed
    16 medium baby carrots, chopped
    1 large yellow onion, chopped well
    Dried Parsley, oregano, sweet basil, black pepper to taste
    1 bay leaf (remove before serving)

Directions

Makes 8 1 cup servings

In a large stock pot, heat olive oil over medium heat.
Add dried spices, bay leaf and chopped veggies. Saute until veggies slightly tender.
Add tomatoes, stock and water. Mix well.
Add lentils. Mix well and cover.
Bring to a gentle boil, then reduce to simmer.
Let simmer as long as you like. (I did mine for 3 hours, but you can let it go until lentils are to your liking.)
Remove bay leaf before serving or storing.
