Ingredients

    1 kg Beef, Inside Round
    3 Tbsp Olive Oil
    2 Large Onions, 400 g
    45 ml Flour
    5 ml Freshly Ground Black Pepper
    5 ml Salt
    10 ml Thyme
    5 ml Marjoram
    500 ml Beef Stock
    500 ml Burgundy
    350 g Mushrooms
    300 g Pearl Onions, Peeled

Directions

Cut beef into 2.5 cm cubes. Mix flour, salt and pepper. Toss beef in flour. Coarsely dice onion. Heat a heavy bottomed pot of mediu high heat. Add 1 tbsp olive oil. Sautee onions until they begin to brown. Remove with a slotted spoon. Set aside. Add 1 tbsp oil to the pot. add 1/3 of beef. Brown in batches adding oil as required. Return onions and beef to pot. Add Marjoram, thyme, beef stock and wine. Simmer 1 1/2 hours. Add Mushrooms and simmer another 30 minutes. Add pearl onions and simmer another 10 minutes.
