Introduction

This was one of my Mom's favorites to cook for my Dad on those cold Ohio days. This was one of my Mom's favorites to cook for my Dad on those cold Ohio days.
Number of Servings: 8

Ingredients

    1 - 1lb bag of Great Northern Beans
    1 - large onion
    5 - medium potatoes
    Salt and pepper to taste

Directions

Makes 2 quarts; 8 1-cup ser vings

1.Place dry beans in bowl and cover with water; soak overnight.
2. Drain, rinse and place beans in a 2 1/2 quart pan and add water to about 1 inch above beans; bring to a boil; cover and simmer for 1 hour. (Check water level often.)
3. Peel and dice onion and add to beans.
4. Add salt and pepper; add boiling water as needed to keep level above beans.
5. Return beans to boil; cover and reduce to simmer for 1/2 hour
6. Peel and dice potatoes; add to beans.
7. Return to boil, cover and simmer for 1/2 hour.

Tip: Soaking the beans in baking soda removes the bloating effect that beans can sometimes give. Soaking also reduces cooking time.
