Introduction

I decided to take a classic sugar cookie recipe made with olive oil and use whole wheat flour, splenda, and some spices. Everyone in my family loved them! Number of Servings: 48

Ingredients

    2 1/2 cups whole wheat flour
    1/2 tsp baking powder
    dash of salt
    4 egg whites
    1 cup of splenda
    1/2 cup extra virgin olive oil
    3/4 cup water
    1 tsp vanilla extract
    2 tblsp cinnamon
    1 tsp almond extract

Directions

1. preheat oveb to 375 degressF and line cookie sheet with parchment paper, nonstick foil, or silicone liners, or spray with nonstick spray
2.large bowl, whisk flour, baking powder, salt and sugar, set aside
3.in medium bowl whisk eggs, olive oil, water and vanilla
4.use rubber spatula to stir the liquid mixture into the dry mixture, just until well combined. If mixture is too stiff, add more water
5.drop teaspoon size onto prepared cookie sheets 2 inches apart
6. bake 12-15 mins
7.remove and let cool
8. enjoy!

makes 4 dozen or about 48 teaspoon size cookies.
