A super simple and super healthy hot breakfast that starts the night before in your crock pot and is waiting to be served when you wake in the morning! Makes a good bit, so reheat throughout the week or freeze some for next week. Ingredients

    ½ c. brown rice
    ½ c. barley
    ½ c. bulger (cracked wheat)
    ½ c. steel-cut oats
    2 T. coarse ground cornmeal

    Pinch salt
    1 cinnamon stick
    2 T. unsweetened applesauce
    1 T Splenda brown sugar
    1 t. vanilla
    ½ c. (or more) dried fruits – raisins, cranberries, blueberries, peaches, apricots, cherries, etc.

    5 c. water

Directions

Spray crock pot with cooking spray, Add all ingredients, stir. Turn on low the night before and cook 9 – 10 hours. Enjoy in the morning. Makes a lot. Freeze some for next week.

Serve with maple syrup or skim milk or your favorite hot cereal topping.

Makes about 12 three-quarter cup servings.
