This is a very easy and healty sauce for pasta. This is a very easy and healty sauce for pasta.
Number of Servings: 6


    2 Tbls Olive Oil
    1 Medium Onion, large dice
    1 cup Greep Pepper, large dice
    2 cloves garlic, minced
    1 tsp dried basil
    1/4 cup Sherry
    8oz Portabella Mushrooms, large dice
    1 cup Zucchini, quartered and sliced
    1 cup Yellow Squash, quartered and sliced
    2 cans Diced Tomatoes, undrained


Heat olive oil in a small soup pot over medium high heat. Add onions and pepper and gently saute until translucent. Add garlic and basil and saute 1 min. Add mushrooms and saute til softened. Add zucchini and squash and saute 1 min. Add sherry and scrape bottom of the pan well. Add tomatoes and bring to a boil. Reduce heat and simmer for 15 min. Serve over pasta or as a veggie side.

Yield: 6 servings.
